Soft Chocolate Chip Cookies with Coconut Flour


2/3 cup coconut flour

1/3 cup arrowroot powder

½ tsp baking powder

¼ tsp baking soda

1/3 cup coconut sugar

1 tsp vanilla

2 whole eggs

1/3 cup Enjoy Life semisweet chocolate chips

4 tbsp coconut oil, melted

4 tbsp ghee, melted

3-4 tbsp water


  1. Preheat oven to 350F.
  2. In large bowl, place all dry ingredients, stir
  3. Add in chocolate chips and stir
  4. Next add in your softened (liquid) ghee, coconut oil and eggs. Let sit for 10 minutes.
  5. Stir
  6. End with adding in the water, till you get the batter to start holding together. You want it to be on the thick side.
  7. Scoop onto cookie sheets.
  8. Bake for 14-16 minutes.
Cool before removing from cookie sheet

For Double Chocolate Chip as shown below, just add 1/4 cup cocoa powder!
