Pizza Casserole

This recipe can be made with Spaghetti Squash or Brown Rice Noodles. Unfortunately Brown Rice noodles cannot be soaked, so eat them in moderation.


2 cups uncooked brown rice noodles of your choice.

1 pound grass fed ground beef

1 can sliced olives

1 onion, chopped

1 package uncured pepperoni (Wholefoods)

Doubled Pizza sauce recipe (link below) or 16 ounces pizza sauce

1 16oz brick fresh mozzarella cheese, shredded


  1. Preheat oven to 350 degrees F. (175 degrees C.)
  2. Cook noodles according to package directions
  3. In a medium skillet over medium-high heat, brown ground beef with onion. Stir in noodles, pepperoni, pizza sauce and olives and mix well. Pour this mixture into a 2-quart casserole dish.
Bake at 350 degrees for 20 minutes, top with cheese, then bake for 5 to 10 more minutes.
