Paleo Homemade Caramel Sauce


Ingredients:

2 cups Coconut Sugar

½ cup butter/ghee

1/3 cup heavy whipping cream or full fat coconut milk

½ tsp vanilla


Directions:

  1. Place sugar, butter/ghee and cream/milk into a medium sized saucepan
  2. Cook over medium to high heat until ingredients are melted and well mixed, stirring constantly.  Bring mixture to a boil and boil for one minute, while continuing to stir. It may take some time to get the coconut sugar to melt and become smooth. Well worth the effort though. You don’t want grainy caramel. Just have patience and keep stirring till the sugar crystals are dissolved it can take about 15 minutes. 
  3. Pour mixture into a mixing bowl and add vanilla. Whip with beaters for three minutes so that it will thicken.
  4. Serve now or pour into pint-sized jar. Store in the fridge and reheat before serving if desired. This recipe makes one pint sized jar or two cups of sauce.



    This Caramel goes great over ice cream!
