Ingredients:
2 tsp butter/ghee or coconut oil
1 clove garlic, minced
1 medium onion, thinly sliced
1 pound raw shrimp, peeled
2 large tomatoes, cored and chopped
1 tsp dried oregano
½ tsp sea salt
¼ tsp pepper
2 tsp lemon juice, fresh
1 cup feta cheese or goat cheese, crumbled
Lemon wedges (optional)
Cooked Brown rice, prepared properly (Low carb option use riced cauliflower)
Directions:
- Heat choice of fat in a large skillet. Add garlic and onion. Cook over medium heat 5 minutes. Add shrimp. Cook for 2 minutes, stirring frequently. Add tomatoes, oregano, salt, pepper, and lemon juice. Simmer for 5 minutes or until tomatoes are pulpy and shrimp is completely cooked.
- Stir rice into shrimp mixture and top with feta cheese, stir gently, and serve with lemon wedges if desired.
