Shrimp Skillet Dinner


Ingredients:

2 tsp butter/ghee or coconut oil

1 clove garlic, minced

1 medium onion, thinly sliced

1 pound raw shrimp, peeled

2 large tomatoes, cored and chopped

1 tsp dried oregano

½ tsp sea salt

¼ tsp pepper

2 tsp lemon juice, fresh

1 cup feta cheese or goat cheese, crumbled

Lemon wedges (optional)

Cooked Brown rice, prepared properly (Low carb option use riced cauliflower)




Directions:

  1. Heat choice of fat in a large skillet. Add garlic and onion. Cook over medium heat 5 minutes. Add shrimp. Cook for 2 minutes, stirring frequently. Add tomatoes, oregano, salt, pepper, and lemon juice. Simmer for 5 minutes or until tomatoes are pulpy and shrimp is completely cooked. 
  2.  Stir rice into shrimp mixture and top with feta cheese, stir gently, and serve with lemon wedges if desired.
