Curried Rice Pilaf


Ingredients:

½ cup chopped green onions, divided

2 garlic cloves, minced

¼ cup butter/ghee or coconut oil, softened

1 ½ cups uncooked brown rice, prepared properly (For a low carb option sub riced cauliflower)

½ tsp curry powder

3 cups vegetable broth

½ tsp sea salt

½ cup golden raisins or dried cranberries

Slivered Almonds if desired



Directions:

  1. In a large skillet, sauté ¼ cup onions, and garlic in choice of fat until tender. Stir in rice and curry powder. Saute for 2-3 minutes.
  2. In a saucepan, heat broth, and salt. Pour over rice mixture; stir. Cover and simmer for 40 minutes or until rice is tender. Remove from heat; stir in raisins or cranberries and remaining onions and almonds if using.
