Ingredients:
½ cup butter/ghee or coconut oil
¾ cup of coconut sugar
½ cup Dutch Processed Cocoa
3 eggs, beaten
1 tsp vanilla extract
Directions:
- Preheat oven to 300 degrees F. (150 degrees C). Grease an 8 inch round cake pan and dust with cocoa powder.
- In a double boiler, or if you don’t have one, put a metal mixing bowl over a pot of boiling water. Melt butter/ghee or coconut oil and chocolate chips. Remove from heat and stir in sugar, cocoa powder, eggs, and vanilla.
- Pour into prepared baking pan. Bake in the oven for 30 minutes. Let cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely.
The recipe can be doubled to make a 2 layer cake.
Chocolate
Frosting:
1/3 cup coconut oil
1 tsp vanilla extract
Melt chocolate and coconut oil together in a double boiler or
metal mixing bowl over a pot of boiling water. Stir in Vanilla.
