Flour-less Chocolate Cake


Ingredients:


½ cup butter/ghee or coconut oil

¾ cup of coconut sugar

½ cup Dutch Processed Cocoa

3 eggs, beaten

1 tsp vanilla extract





Directions:

  1. Preheat oven to 300 degrees F. (150 degrees C). Grease an 8 inch round cake pan and dust with cocoa powder.
  2. In a double boiler, or if you don’t have one, put a metal mixing bowl over a pot of boiling water. Melt butter/ghee or coconut oil and chocolate chips. Remove from heat and stir in sugar, cocoa powder, eggs, and vanilla.
  3. Pour into prepared baking pan. Bake in the oven for 30 minutes. Let cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely.

The recipe can be doubled to make a 2 layer cake.

Chocolate Frosting:


1/3 cup coconut oil

1 tsp vanilla extract

Melt chocolate and coconut oil together in a double boiler or metal mixing bowl over a pot of boiling water. Stir in Vanilla.

Let cool completely and whip with a hand blender till fluffy and frost cake
