Vegan Toffee


1 tsp vanilla

¼ cup coconut sugar

¼ cup water

1/3 cup Enjoy Life semisweet chocolate chips (Yes these are Dairy Free)

parchment lined shallow baking pan

candy thermometer


  1. In pot add Coconut sugar, nectar and water over medium high heat, stir occasionally, until it boils and sugar is dissolved.
  2. Insert Candy thermometer and boil till it reaches 285 F. Remove from heat and quickly pour into a waiting pan. Spread ½ inch thick.
  3. Score candy into bite size pieces and cut through. Let cool 2-3 hours and melt chocolate and dip each piece of candy into the chocolate and place on parchment paper and store in the fridge.
